Garage storage layouts that still let you park

Short answer

The car decides the shelf depth. In a 24 ft deep garage the Model Y leaves room for 24 in shelves plus 36 in to walk; the F-150 leaves only 54 in, so 18 in shelves. A Fleximounts GR48, 4 × 8 ft hangs at least 22 in, so under an 8 ft ceiling its bottom is at 74 in: over a car or SUV, but not over a full-size pickup.

Keep a rack clear of the open door. The opener and its track run about the door's height plus 50 in back from the door, per Amarr, and Fleximounts says to leave “a good six inches” (6 in) between the door and the rack. With a 7 ft door that's the first 12 ft or so from the door.

Fleximounts' own pages disagree on the GR48's rating: 750 lb on the product page, 400 to 600 lb in its installation guide. Load it to the lower figure.

Bikes

Steadyrack's pivoting racks fold a hung bike toward the wall: it sticks out about 16 in for a road bike and about 39 in for a mountain bike, per the maker. On the walking side, that comes out of the 36 in.
